Chicken Veggie Soup

 

Is it me or has cold and flu season been particularly bad this year? Everyone I know has gotten sick, myself included. The best cure for what ails you though is a hearty chicken and veggie soup. It’s soul-soothing and easy to make a big pot for the whole family, or portion it out and freeze it so that you can save it for a day when you’re feeling a bit blah and don’t want to cook.

 

What I love about this recipe is that it is chock full of vegetables that do you right. There’s spinach, broccoli and zucchini in it too, which is different than other chicken soup recipes. There’s also lemon juice which I think gives it an added element of flavor. It adds more vitamin C to the soup which is always helpful when you’re working on your immunity and well-being.

 

This soup really eats like a meal because of the hearty chunks of chicken and pasta in it. You can add whatever pasta shapes you like and if you’re not doing carbs, you can leave them out. It’s really versatile. Serve it with some whole wheat bread if you’d prefer too. There’s really no wrong you can do with this soup, and you’ll feel so right again once you eat it for its incredibly nourishing powers.

Instructions
  1. Dice hard veggies, and add all ingredients to pot or slowcooker. Bring to boil then simmer for 1 hr. Add Salt, Pepper & Seasonings to taste.
  2. Serve or cool and portion to freeze
